Everyone always has leftover ingredients from baking – be it flour, baking powder, confectioner’s sugar, chocolate chips or in this case coconut. I had leftover coconut from the Coconut Poundcake Recipe, and so I decided to make these delicious coconut bars.

Adapted from Southern Heritage Cookie Jar Cookbook

INGREDIENTS:

½ cup butter
1 ½ cups sugar
2 eggs
2 tsp citrus rind
¼ cup citrus juice
3 cups flaked coconut
1 ½ cups flour
1 tsp baking powder
¼ tsp salt

METHOD:

Preheat Oven to 350 F.
Cream Butter in a large mixing bowl, gradually adding sugar, beating well.
Add eggs, rind and juice and 2 cups of coconut.
In a separate bowl, combine flour, baking powder and salt, mix together.
Add dry ingredients to wet and stir.
Spread batter evenly into a large greased and floured baking pan.
Sprinkle with remaining coconut.
Bake for 25-30 minutes.
Cool completely in pan and cut into 2 inch squares.

Yields about 2 dozen
