Granita is the adult version of a snow cone, but with a smoother consistency. If you are looking for a nice refreshing summer treat that is as beautiful as it is tasty, try this Pomegranate Granita.

INGREDIENTS:

2 Cups of water
½ Cup granulated sugar
½ Cup Pomegranate Juice
½ Cup Lemon Juice
Lemon Zest and Pomegranate Pearls for garnish

METHOD:

Heat the water and sugar together on low heat in a medium saucepan. Stir until sugar dissolves completely. Bring mixture to a boil. Remove from heat and allow mixture to cool completely.

Combine the Pomegranate and Lemon juice to the syrup after it has cooled. Place in a shallow container that is freezer safe. Freeze until solid.

After mixture is frozen solid, plunge the bottom of the frozen container into very hot water for a few seconds. Turn the Frozen mixture out onto a cutting board and chop into chunks.

Place the chunks in a food processor and process it until it is a smooth consistency without being too slushy. Serve in bowls and garnish with lemon zest and pomegranate pearls.
