This is a recipe we fashioned from leftover Easter ingredients. But in reality you can make this with almost anything. If you don’t like phyllo dough or can’t find it in the freezer section at your grocery store, you can use a store bought pie crust, or you can make a frittata which is an Italian version of a crust-less quiche.
This is a Leftover Queen classic as the only constant in this would be the eggs.
The rest is up to what is in your fridge and in your imagination!

Prosciutto is a cured paper-thin ham. The most well known is the kind from the region of Parma in Italy. It can be used for sandwiches, in omelets, on pizza or in Antipasti (appetizers). In this recipe it is paired with fresh figs, a sweet, soft fruit found all over the Mediterranean region.
Serve this as an appetizer with some crusty bread and cheese, like a good parmigiano reggiano and a glass of wine.

Everyone always has leftover ingredients from baking – be it flour, baking powder, confectioner’s sugar, chocolate chips or in this case coconut. I had leftover coconut from the Coconut Poundcake Recipe, and so I decided to make these delicious coconut bars.

This is a delicious bunt style cake. Serve it up with some pineapple sauce, whipped cream or ice cream and it is sure to be a crowd pleaser! We had it for Easter and it was fantastic, rich and tropical!

I am not even sure I know exactly what a Meme is – but Sognatrice asked all of her foodie buddies to join her in this. I guess I qualify, so here it goes!
1. Can you cook? If yes do you like to cook?
I can and I absolutely LOVE it!
2. When does your whole family come together to eat?
Well we live fairly close to our relatives, so we usually get together every month for a big ol’ family dinner. But immediate family, everyday, unless there is something special going on!
3. What do you have for breakfast?
Coffee! I just got a caffettiera, a little stovetop espresso machine and it is wonderful! To go with it I normally have something bready – like toast or an english muffin. On rare occassions I will have a smoothie.
Hmm…maybe I should start thinking about an espresso smoothie!

Green beans are delicious when sautéed with nuts. I like to make mine with toasted almonds, but you could substitute with pine nuts, sunflower seeds, or even walnuts! This dish is delicious with lots of garlic and bright with citrus undertones!

This is a comfort food classic! All you need are some beans and greens and your creativity to make a wholesome dinner! This is a rustic dish full of fiber and protein. To make my version use cannellini beans, swiss chard and sausage. This is a one pot meal with very little clean up. Delicious and filling!
