
Man, there is a lot of squash out in the blogosphere these days! I love squash fritters, to me, it is the absolute best way to cook this “filler” vegetable. There is something about pan frying shredded bits squash with onions and other veggies that really bring out the squash’s hidden sweetness. Zucchini is another great food for making fritters or pancakes. One of my all-time favorite personal creations was Zucchini Fritters with Chipotle Harissa Yogurt . So with that dish in mind, I decided to use the cousin of the zucchini, the humble yellow squash.
I got these cute yellow squash that became affectionately know as “Spaceship Squashes” at the Farmers Market. Have you seen these guys yet? Anyway, it was the last time this particular produce stand was going to take part in the weekly market this season. We love this stand because their local produce is always so BIG - remember that gigantic head of cabbage for a dollar ? - well this is that vendor. So I decided to grab as much as we could for the freezer over the next few months, including another large cabbage and a basket of these cute squashes.
They sat in the fridge for about a week, until I realized that I needed to use them up soon. So I decided to make fritters for another Movie Night. We ate this while watching a DVD of Buffy, The Vampire Slayer Episodes - Season 5. Yes, I love Buffy. The show has gotten a mention twice this week. What can I say, it is quite enjoyable. I promise though, this is as geeky as I get…besides my Lord of the Rings problem, but that is a whole other story. But I am thinking we should have been watching something with aliens for this particular meal. Perhaps, more suited would have been Firefly. *insert geeky music*
Spaceship Squash Fritters
(makes 6 large fritters)
INGREDIENTS:
4 spaceship squashes, grated
1/2 vidalia onion, diced
1 red bell pepper, diced
1/2 tsp curry powder
1/2 tsp cumin
1 egg
1/2 cup whole wheat pancake mix - needed to use this stuff up- you could use ww flour.
1/4 cup whole wheat bread crumbs
1/4 cup shredded cheese ( I used half parmesan and half sharp cheddar)
salt and pepper to taste
METHOD:
Grate squash in a food processor or using a box grater. Salt squash and let it sit in a strainer over a bowl for about 1/2 hour. In the meantime, sautee the onions and peppers in a large skillet. When onions are transparent and soft, add spices.
After 1/2 hour, squeeze the squash hard until most of the water comes out. Combine squash, onions peppers, egg, pancake mix, bread crumbs and cheese in a large bowl. Salt and pepper to taste. Form into patties and dredge in a little more pancake mix. Pan fry in olive oil until golden.
Serve as a burger in buns, or like we did with pita , tomato and avocado slices.

Those look so good! As squash starts to really come in season here (and it gets bigger as the summer rolls through), I will have to give this a try! I imagine even my boys would eat these.
Yum!!! I’ve been trying to grow these spaceship squashes this summer, but all my blossoms fall off at the stem! I’ll have to keep an eye out at the market, so I can try your fritters!
I haven’t seen these before but I love anything like pumpkins, squash, or courgette fritters and thanks for reminding me of them.
I don’t buy squash because I don’t know what to do with them. Spaceship fritters sound good!

Around here, we call them patty pans. Never thought I could use them for a fritter. I always just use them as part of a roasted veggie pan. Thx for the idea!

Yup I know them as patty pan squash too. But I can’t ever find ‘em. Only sometimes at a farmer’s market. They’re sooo good, so tender and sweet. As for making patties, I have to say I love the idea but every time i do it, I make a gigantic mess! I need a bigger food processor…

Yeah, um, nice food and all, but I’m more interested in your geekiness. I am an old Buffy fan (Seasons 1-5) and an LOTR fan. My other favorites include the Star Wars series, Matrix trilogy and Spider-man movies. So who’s callin who a geek?

Ah, season 5 was good. It’s been so long since we’ve watched _Buffy_… about 5 years ago since we completed the whole series. Then we made other people watch the whole series as well… then made them answer a questionnaire! I should send you the questionnaire and see what answers you come up with! =D

yum - that looks delicious - and I laughed at the name - I have recently heard them called pattypan squash which seemed to distinguish them from other squash but I love spaceship squash

I have been a big fan of fritter since my childhood days of potato fritters made by dad.
You just can’t beat fritter for the satisfaction of putting everything in a blender, frying it and ending up with something totally delicious can you? I’ve made courgettes fritters before but I’ve never actually used these speaceship squashes - they are so cute! Can squashes be cute?!

You know Teresa, I have never made them. it was the job of my great aunt to make them when we were growing up and now I just have them when I come across them. The ones I had growing up were always with anchovies or with honey (a Calabrian thing). Although many others make them with a cream or custard filling.
