Vitamix Creamy Tomato Soup (and 7 Things)!

Thanks everyone for all your great comments recently – especially as it pertains to my two posts on year 2010 goals. I think we all have goals, but for me, putting it out there and in some sense therefore being more accountable makes it more fun – and more of a challenge for me! So thanks for all your lovely comments and feedback!
In my last post, as it pertains to one of my food goals for this year, I told you I was going to post a recipe for creamy tomato soup that I prepared in my Vitamix for lunch last week. I was lucky enough to receive one of these AWESOME machines from my lovely husband for my birthday. I have been wanting one for over 3 years, and this year, I guess I was a good girl!
These machines are not cheap, but they do take the place of a blender, food processor and grinder (you can actually grind coffee beans in it) all in one. In fact you can make fresh fruit and veggie juice in it too – not pulpy but rich and creamy from all the natural fibers – the blades are that powerful. You can even make a kind of ice milk or fruity dessert in it as well.

We have really been enjoying all the above mentioned treats have we make with it, especially our nightly smoothies, but one of the things I love the most about the Vitamix is that is actually MAKES soup – I mean you don’t even have to cook it – the heat created from the friction of the ultra fast blades heats it up! So you literally have soup in 5 minutes.
Here is what I did:
INGREDIENTS:
1 box of Pomi strained tomatoes
1 ½ organic roasted red peppers (jarred)
dash of organic heavy cream
salt
freshly ground pepper
dried oregano
dried basil

I put all of this in the Vitamix and let her rip. In about 3-4 minutes you could see the steam coming out of the lid, telling me that it was done. That’s IT. The soup was so rich and creamy. The taste of the black pepper was very prominent – I guess it go so pulverized that it really infused the entire soup. I put a dollop of homemade yogurt on top and it was a wonderful, filling and super healthy lunch full of one of my favorite things – Lycopene, because it is oh so good. So go ahead and enjoy some tomato soup today!

On another note my friend Betherann from Kitchen Courage gifted me with a Beautiful Blogger Award and asked me to share 7 things about myself. So here they are:
1) I just took a DNA test for ancestry and health. I am adopted and know nothing at all about my birth family, my ethnic heritage or the types of health problems that run in the family. I have been waiting 33 years for this – and decided to finally do it. If we are facebook friends, keep checking my status update for how you can be involved in this life changing event! Trust me, it’ll be fun!
2) My favorite flower is the Thistle.
3) If I never had asparagus again in my life, I wouldn’t miss it.
4) I believe in life you have to be willing to take risks in order to realize your full potential.
5) My favorite color is Rust – which is why I probably love eating pumpkin, squash and sweet potatoes so much!
6) I spent a year in Norway and speak some Norwegian – I used to be fluent – but it has been 15 years!
7) I am a very accurate and passionate archer – makes sense since I am a Sagittarius!

thats so crazy that the blades heat the soup up! I’m not normally a tomato soup fan, but with the red peppers this sounds good enough to try!

That is such a cute picture. I LOVE my Vitamix. Do you know, though, I have never made soup in it like this? Tomato soup is one of our favs, too. So I will have to put this on my very long list of recipes to try. And yes, you must have been a VERY good girl. *wink*

I used to love archery, I got the merit badge for it in Boy Scouts. Heh. I haven’t had a situation where it’s been really feasible to do it again. City life, you see.
The soup looks great! My mom used to have a vita-mixer, she did all kinds of awesome stuff with it.

Love the tomato soup recipe. I’ll give it a try with my HealthMaster. I couldn’t resist the infomercial this Christmas and bought my own gift. I haven’t been disappointed. It does everything. I haven’t tried the sorbets, but I’ve made soups, juices, smoothies and even mixed up a banana bread!

I have the CIA version – I chose that model because I had used it before when I was teaching cooking school – they had one at the school and I fell in love with it. Anyone can blend soup! I am sure you would be a great job!

Great post! I so love my Vitamix–I have had it for several years and it is the most used tool in my kitchen. (I am jealous of your red one though–mine is plain old white!) I have made soups in it before and they always turn out great. I am loving your simple tomato soup–going to mark it to try.

What a great gift! It looks like it’s large enough to make a decent quantity of soup, too. I tried pureeing vichyssoise in the food processor the other day–I know, I know, I probably should have used the blender–and doing it in batches just meant a mess on the floor, on the stove, on a cookbook… you get the picture.

I love my VitaMix, too!! I’ve not been explicit about my use of it in my blogging but I am going to since reading your post…it just makes life easier and the food is so good! I made a banana frozen yogurt in it last night and it was wonderful – it even stayed in the container when I turned it upside down.

I love your pic. I have had my vitamix since my son was born….15 yrs. I love it. I made all the baby food for him and his two sister that came along. I never bought baby food! I think because of giving them a large variety of food at an early age, they are NOT picky eaters. My daughter and I picked some tomatoes to make a soup and that’s how I found you. God bless

The VitaMix is perhaps that best machine ever invented! Believe it or not, you can get one at http://www.vitamix.com for those of you interested. And yes, it is expensive. My father gave us one for Christmas and I am THRILLED! Our blender was starting to go, so I couldn’t be happier! The best part about it is the ability to clean it so fast and easy! You put a few drops of dish soap and fill it halfway with water, put it on the base with the lid and lid plug and turn her on! Then a quick rinse under the faucet and your done! I’m very excited to try the tomato soup in it, because I have only made smoothies in it so far… All my dad kept saying on Christmas Day over and over was, “you can make soup in it!” I think he was trying to give me a hint that he wanted me to make HIM soup in it!
He bought one for my mother a few years ago before she had passed away (Sept 2010) so she could make her macrobiotic meals in it (she passed away from breast cancer). Please keep the recipes (any type!) coming!

This will be part of tonight’s dinner! I have been searching for a creamy tomato recipe and here it is. I will substitute the cream with soy milk and see how that works. I have been doing that with the cream of potato soup for my picky eaters and they LOVE it! Thanks for the inspiration.
