Raw Avocado Chocolate Pudding!
So I asked my facebook followers last night which recipe they wanted to see posted first, out of my list of back-logged posts. This chocolate pudding was the overwhelming winner! So by now, you know what the secret ingredient is – Avocado. Yep, I am serious. Don’t knock it ‘til you try it.
Pudding, custards, crèmes are all among my favorite desserts. What makes them so great? For me it is the creamy and delicious texture. Since avocado is mostly fat (the good kind), it makes a great base for a thick and creamy pudding. The dark chocolate overpowers the taste of the avocado, so it really works, and no weird flavors that shouldn’t be there! Plus, the time it takes to make this pudding is less than 5 minutes! Can’t say that about many other made-from-scratch puddings!
We made this dessert when my stepdaughter, Gwen was visiting (isn’t she gorgeous?!). She has a very adventurous palette and we have the best time cooking up interesting and delicious creations in the kitchen when she is here! I wish she was here more often (hope you are reading this Gwen!)! She was a bit skeptical about this dessert, but she will always try something before she decides if she likes it or not (gotta love that in a young adult)! Well, it got the “Gwen Stamp of Approval”! On her excellent suggestion, we served our pudding with a nice healthy dollop of fresh whipped cream and a sprinkle of cinnamon on top! Perfect!
This is rich, satisfying and extremely healthy dessert. Absolutely 100% guilt free.
INGREDIENTS:
3 ripe organic avocados
½ cup raw milk (coconut milk would work too)
1/3 cup pure maple syrup
1/3 cup fair trade, dark cocoa powder/ or raw cocoa nibs
Pinch of cinnamon
METHOD:
Throw all the ingredients in a blender or food processor and blend until creamy and well mixed.

This is such a great idea! I’d love to try it with coconut milk. I’m having a coconut and chocolate kind of week. Also, I’ve tasted a tres leches cake made with avocado, and that was fabulous–so I know the wonders of avocado in a dessert!

wow, intriguing but it does make sense – avocado is so creamy but not such a strong flavour. And as Arlene says, no cooking.
Love that there would be so much less saturated fat in this than a conventional chocolate mousse

Avocado in a pudding eh! Sounds very interesting. Before I saw the ingredients I was expecting to see lots of melted chocolate to overpower the avocado but just cocoa powder? Even more interesting!!! Happy New Year dear friend!

It was delicious! I needed a more ripe avocado to keep the consistency smoother, but I loved the richness of it. I can eat just a little and leave it alone, unlike other chocolate loves in my life. I can confirm that you cannot taste any avocado flavors. Thanks for the recipe. P.S. toddler approved!

Well….. I tried this recipe and I really really liked it. I asked a couple of co-workers to try it and they weren’t too keen on it but this is a great recipe. They said it was a little bitter but I think after it sits in the fridge for a while the flavor will be even better. The cinnamon really enhances the chocolate flavor.

Sounds so interesting! I recently made a “one ingredient” banana ice cream and I was so amazed how delicious something so easy was. This looks like a similar type of “wowie!” recipe. If I ever get out of the snow I might try and find some avacados this sounds great!

Geez, I just now found your blog. I’ve had avocado and chocolate pudding before and liked it alot, but I never found a recipe for it. Now I will have to try this. Maggie’s idea to use cashew cream is perfect too.
btw – did it even stay around long enough for the avocado to oxidize, or is that even a concern? Does it truly come out brownish-green? The creamy texture of pudding/yogurt/nut butter is my favorite of all. Thanks so much!

Hi cheftom – no I don’t believe the avocado oxidized. The reason why it was brown in because of the cocoa powder in it!

I made this desert tonight and it was so yummy. I added some stevia and kept it in the fridge for about an hour before serving. My dinner guest brought over some lingonberry preserves so we put that on top. Yum! Yum!

Inspired by your use of avocado, I tweaked the recipe a bit. Totally delish!
1 avocado, 1/2 c raspberries, 1tsp van extract, 1tbsp cocoa powder, maple syrup or honey to taste and BLEND!
Of course no one guessed the avocado bit and were wondering where all the nice creaminess came from

Definitely trying this—with almond milk! I’ve made chocolate-avocado pudding before with dairy but now we’re pretty much dairy free, so this would be great. Also, the other recipe I had called for cooking, and I like the idea that this is raw. And so, so easy. Gives me an excuse to go buy some cocoa nibs from our local fair-trade and organic chocolate factory down the road here in Seattle. Love that place. Thanks for the recipe, Jenn! I didn’t have three avocados but I tried this with one and used 2tbsp raw cocoa, 3tbsp maple syrup, 1/4 cup unsweetened almond milk, and 2tbsp half and half. Yum! Going to experiment to lower super but still good!
