Canned Pumpkin… A Penchant for Pumpkin

This is about getting inspired by the cans in your pantry closet. I am an enormous fan of pumpkin. I am not sure if that is why my favorite season is autumn, or because pumpkin is so synonymous with my favorite season, I love it so much. Or maybe it is its deep orange color (which happens to be my favorite color). I think what I love most about it, is that it is still a “Seasonal Vegetable”. People generally eat pumpkin, in the autumn and early winter, the time in which it is ready for harvest. I am also a huge proponent of eating seasonally, so all of these reasons tickle my fancy! Plus I generally only eat it in season, so it is a treat for me every year.

Now when you bring in the element of canning, something I want to experiment with this year, you can have veggies and fruits that are not in season, because you prepared them for eating later, by preserving. I did not can my own pumpkin, here, but I did have some canned pumpkin in my pantry, just the same. I got a hankering to do something with it, and so I dove in.

I knew I wanted to make Pumpkin Quick Bread, but I also wanted to try a baked dessert too. So I went with Pumpkin Brownies.

Both recipes were great, and even Roberto loved them, which is great, because he is kind of iffy about pumpkin, especially in dessert items. So now I know there are several pumpkin recipes I can make that he will love too!

For the Pumpkin Bread I used a combination of these two recipes , one from No Fear Entertaining and the other from RecipeGirl but used yogurt instead of oil and added raisins.

For the Pumpkin Brownies I used this recipe, except that before the last 10 minutes of baking, I topped the brownies with coconut, so it came out with toasted coconut on top! YUM!

Mediterranean Mondays in February: Cedar’s Mediterranean Foods, Inc.

Speaking of good fortune, yesterday I was the lucky recipient of one of these Mediterranean food boxes – because you know, I want to sample this great food too – and I can tell you right now that you do not want to miss your chance to be eligible for this giveaway. Inside my Mediterranean box of goodies was pita chips, 2 varieties of hummus, 2 varieties of tzatziki, spinach dip and a very cool t-shirt. Yum yum yum. So you all can guess what we had for dinner, right?…I thought so – a lovely meze/antipasti of all this great stuff. Everything was delicious. Roberto’s favorite was the pita chips and spinach dip and I loved the tzatziki the best – especially the roasted red pepper flavor, which I have never seen before. The baked pita chips are super crisp and the dips all had great flavor.

Also on this plate of food is some delicious chorizo (back left corner of picture) that I received as a gift from my good friend Nuria who blogs Spanish Recipes all the way from Spain! She was kind enough to award me and a few other with this tasty treat by way of saying thanks for bringing extra traffic to her blog this past year. I would have thought just a thank you email would have been enough. But if you know Nuria, you know she goes out of her way to be thoughtful and generous. So thank you Nuria! It was delicious and tender. We loved every bite and we can’t wait to enjoy the rest.

Well, we wanted to involve the whole family in this treat, so we let Pepino lick the plastic seal over the Cedar’s hummus. I am not sure which he preferred, as he was too busy licking to tell me :)

Buckwheat Pudding with B. Lloyd’s Nuts

I love puddings – rice, bread, custards, you name it, if it is creamy and flavored with vanilla, I am all of it! I also love buckwheat, it has pretty much become my favorite grain of all time. I am not really big on the grains unless we are talking about bread, but there is something about buckwheat that I just love. Maybe it is all the protein or just the nuttiness of the flavor. Whatever it is, I decided to make a pudding, starring my favorite grain, humble buckwheat.

I thought it would also be the perfect dessert to showcase some delicious B. Lloyd’s nuts that I was asked to try by the folks at Komet Marketing. They’re all natural glazed and salted nut salad toppings, that are really delicious! Great health benefits of nuts with a great flavor, made with certified organic non-hydrogenated oil. Right now the nuts are available in grocery stores in California, Florida, Alabama, Louisiana. I have been enjoying them on top of salads, or just right out of the canister. There are at least 6 different varieties to chose from. Great to have in the pantry whenever you need to add a little crunch to your dishes.

We ate the pudding warm, as a dessert, with a pool of almond milk and honey on top, but it could just as easily be served up for a hearty breakfast!

Recipe: Curried Penne Pasta

We have been getting ourselves re-familiarized with pasta lately. Due to rising food costs, I have been trying my best to stretch things, like our veggies and meat and following in the footsteps of my Grandparents, pasta often comes to mind. There are a lot of great pasta types out there now that are more healthy than your garden variety enriched “white” pastas. Roberto, like a good Italian, has always been big on pasta meals. Before he met me, he used to eat pasta every single day of his life.
For myself, I have always joked that I am not a good Italian, because I have never really been a big pasta eater, even less so as I got older, because it really likes to stick to certain parts of my body that I really wish it would not. But now, with all these varieties to choose from, I have found healthier versions.

Not all pasta is created equal…

One of my favorites is De Boles. Not only is De Boles organic and all natural, but it offers gluten free and whole grain varieties as well as my favorite, the ones made with half Jerusalem artichoke flour and half semolina flour. This means it has a lower glycemic index. Jerusalem artichokes also contain inulin which is a pre-biotic (not pro-biotic – although those are good too) that stimulates the growth of beneficial bacteria in the digestive tract that in turn aids digestion and lowers blood pressure and cholesterol. Texture wise, it is just like regular pasta. You are unable to tell the difference. Take it from the Italian and the Italian American.

When using regular pasta, my favorite brand was always Barilla. It always cooks perfectly and is the preferred brand of most Italian households. The company was founded in Parma, Italy and has for 130 years been family owned and operated. Also in 2007 they were one of the six out of 5,000 globally recognized companies evaluated as “most ethical”. So you can also feel good about eating this pasta. Another reason to feel good about eating Barilla is that they too have some out with new healthier varieties with their Barilla Plus – multigrain line of products. Barilla is also way cheaper than De Boles, so it is often what we have in our pantry.

I wanted to try some different pastas that are not traditionally Italian in taste, to spice things up a bit. So recently I made a curried penne. I had finally found an Indian market near where my mom lives and I picked up some great spice mixtures and had a hankering to try them out. I am a huge yogurt lover, and yogurt (which contains PRO-biotics) is found prominently in Indian cuisine, so an idea for this spicy pasta started coming together. However, I doubt you would ever find this on a menu in any Indian restaurant! It is a Leftover Queen classic ;)

Product Review: Genesis Today Superfruit Boosts, Delicious Superfruit Cocktails and a Triple Dog Dare!

Here I am with another great product for you. Lately I feel like I have been a party to a really great trend. The trend in healthy food products,  products that are 100 % natural without fillers, corn syrup, propylene glycol, artificial sweeteners and other what I like to refer to as “food crap” that companies like to pass off as actual food ingredients. This is especially hard to achieve when it comes to fruit juices.

Go to any convenience store or supermarket and grab the first juice you see, and likely one of the above ingredients will figure into the equation. Much to my dismay. So when I was contacted to do a product review from Komet Marketing for Genesis Today, a line of superfruit juices, the first question on my mind is what’s in it? Amazingly nothing but juice and some citric acid. So why drink something like a Boost Juice? Well Superfruits are big these days, and it is not because they have exotic names like Açaí and Goji, but because they are powerful antioxidants.

Genesis Today knows this, but also knows that some people are turned off by the sometimes bitter taste of the pure superfruit juice, so they have created these Boost juices in order to address that concern by mixing the highest potency of active superfruit ingredient levels with juices like pear, strawberry, dragonfruit and prickly pear to make it taste better. Not only this, but the superfruits are wild harvested.

Earth’s Sweet Pleasures : Organic Fair Trade Fudge

Yes all you chocolate lovers out there, I speak the truth. This is really good fudge from an excellent company. I have had the pleasure of exchanging emails with Reonne otherwise known as the “Choco Mama”, over the past few weeks. She and her husband, Hawk, known as “The Fudgemeister” started Earth’s Sweet Pleasures because although Hawk has been making fudge for 40 years, they wanted something better than chocolate, chocolate that is both earth-friendly and socially responsible. They found themselves among concerned consumers who feel it is important to transform chocolate trading practices through donating generous proceeds from the profits of their business to earth friendly and humanitarian causes that promote economic fairness for cacao farmers and their families. Well done. So, Hawk went to work creating their delicious organic recipe using fair trade chocolate and 2 1/2 years later, after setting up a business, here they are with a line of delicious treats – that are guilt free in a socially conscious and environmentally friendly way! This is the kind of company that people should support. A family business, run with the well being of the world considered in its product. This is a recipe for success.

Product Review: Matisse and Jack’s Bake at Home Energy Bars and Snacks

I have a confession to make….I forgot to do something…and I feel really bad about it….

I get a lot of offers to do product reviews for a variety of different companies whose products either are or relate to food in some way. Some products I just refuse right away because I cannot support the ingredients – either they are not healthful or just full of preservatives. Then there are the many that I do try that just aren’t very good – either once I get the product I realize it is full of nasty ingredients or the taste is just bad– so I won’t feature them on this blog because it is not fair to you, my faithful readers. :)

But there has been one very strong exception to the rule, and here is my confession. I received 2 boxes of Matisse and Jack’s Bake at Home Snacks a loooong time ago and I tried them and LOVED them. But for some reason the first box I made, we forgot to take pictures and then it took me a while to make the second box – which I did do very recently.

Here is why I love these products:

1) They are all full of good for you ingredients that are all natural.

2) They are customizable – meaning you add your own goodies to them, and they give you plenty of suggestions – you can even make them vegan.

3) They are as easy to make as a prepared cake mix – you just add wet ingredients (like yogurt or applesauce) to the dry, mix and bake. It could not be easier.

4) Best of all – they taste great – perfect for breakfast, snack or dessert with a bit of ice cream for an a la mode.

5) They are helping the environment by reducing waste that usually comes with conventional energy bar packaging.

So finally here is a great product line that I can support, and feel good about! They are full of good ingredients with a wonderful taste AND a mind for helping control environmental waste! There is just so much to love about these products!
I am just so sorry I took so long to do the write up and let everyone know about these delicious bars!

The Leftover Queen’s “Favorite Things”: Holiday Gifts For Foodies

Kalamata Gold Greek Organic Extra Virgin Olive Oil - 500 ml bottle
I love olive oil and for Mediterranean cooking (my favorite) you must have a good olive oil, no scratch that you must have an EXCELLENT Olive Oil, Extra Virgin, please. I know everyone has their favorites, but I favor Greek Olive Oil (I know, I am a bad bad Italian). It is like liquid gold – full of freshness, floral hints and a peppery afterbite.

Dolce Italiano: Desserts from the Babbo Kitchen
Speaking of Italian things and cookbooks, this is one of my new favorites. I had the extreme pleasure of meeting Gina DePalma, the author and pastry chef for Mario Batali’s Restaurant, Babbo, through cyberspace. I was able to join a few other American Expats in Italy by trying several of Gina’s recipes and it was a wonderful experience. Sherry Vinegar 6.8 oz
I don’t know how I lived without this product for so long. I just didn’t get it. I thought with Balsamic, Red Wine, White Wine, Rice Wine and Apple Cider, you had all your bases covered. I wasn’t feeling all these extraneous vinegars. I mean how many vinegars did one person need. I already have an olive oil problem (too many!), I didn’t need to start on the vinegars. How wrong was I. Since I discovered this Sherry vinegar, I have been converted. We had it at the cooking school where I work, and I added it to a red pepper dip I was making, and it turned that dip to magic. It was amazingly better. So I knew this was something I needed to add to my repertoire!

So this begins my own wish list section!

Paula Deen uses the fish measuring cups and spoons on her show and they have more than just cups and spoons, they have things for tea and coffee, salad spoons, and even holiday things. Really cool stuff! Also made in the USA, by a true artisan. Love that.

Vita-Mix 1321 Professional Series, Ruby
This is the ULTIMATE in kitchen appliances. We have one at the cooking school and I have so enjoyed using it. I always describe it as a manual vs. automatic (in car terminology). There is an on-off switch but there is also a speed dial that allows you to easily control the blending, grating and pulverizing this machine can do. Yes, it is expensive, but with it, you replace a blender, food processor and coffee grinder. It even comes with a HUGE cookbook that has many tasty recipes! It is very very cool and comes in a lot of wonderful colors like Ruby, Onyx and Platinum. I like the red.
