<p style="margin-bottom: 0in;">Last week marked the first day of Autumn for us, in the Northern Hemisphere. The Autumn Equinox, Harvest Home, Mabon, or whatever you like to call it, is officially my favorite day of the year, because it marks my favorite season of the year. Autumn for me is like the beginning of a new year, a re-birth of sorts, a time for inner reflection as we turn inwards while hunkering down for colder weather. There is much to celebrate – cooler temperatures, fireplaces, time with family, cozy evenings sipping hot beverages, snuggling up in blankets and reading stories, beautiful colors, and seasonal fare. I feel like fall foods, are some of the most universally seasonal eating people do – hearty soups and stews, pumpkins and other winter squashes, roasted root vegetables, and fruits like pears and apples figure prominently for most people without even having to think about it. There is something about the crisp air that hearkens to change.</p>

<p style="margin-bottom: 0in;">To celebrate the change of seasons, I always like to make a special dinner on that day. So for this equinox I prepared Apple and Swiss Chard Tart. You may remember me making this before, but this time, I prepared my own gluten free crust, using a combination of garbanzo bean, fava bean and rice flours. I also used Cameo apples, one of my favorites. It goes wonderful with a nice slice of sharp cheddar – another ingredient in the pie. We always have the Seriously Sharp Cabot Cheddar in our fridge. It is amazing to eat plain, but also goes great in cooking. It also makes us feel closer to the home in our heart, the state of Vermont.</p>

<p style="margin-bottom: 0in;">Because this is such a comforting, yet healthy dish, I wanted to make it in honor of something else, besides just the changing of the guards so to speak. Just like last year, when I baked it for Breast Cancer Awareness. This year I wanted to make it for the <a href="http://bleedingespresso.com/2009/09/2nd-annual-o-foods-contest-for-ovarian-cancer-awareness-month.html" target="_blank"><strong>O Foods Contest for Ovarian Cancer Awareness</strong></a>. This is its second year running and is done to raise awareness about Ovarian Cancer.  The O Foods tradition is in honor of our friend, award-winning pastry chef <a href="http://ginadepalma.net/home.html" target="_blank"><strong>Gina DePalma</strong></a>,  author of<a href="http://www.amazon.com/gp/product/0393061000?ie=UTF8&amp;tag=leftoverquenn-20&amp;linkCode=as2&amp;camp=1789&amp;creative=9325&amp;creativeASIN=0393061000"> <strong><em>Dolce Italiano: Desserts from the Babbo Kitchen</em></strong></a><em><img style="border:none !important; margin:0px !important;" src="http://www.assoc-amazon.com/e/ir?t=leftoverquenn-20&amp;l=as2&amp;o=1&amp;a=0393061000" border="0" alt="" width="1" height="1" /></em>. Gina has been fighting ovarian cancer for the past year and a half, and in addition to physically battling the disease, she has also started the <a href="http://www.ginadepalma.net/The_Cowgirl_Cure_Foundation.html" target="_blank"><strong>Cowgirl Cure Foundation</strong></a> to raise awareness and money for research as well. She is an amazing woman, and I wish her all the best. She will be judging this years O Foods Contest!!! But since I am posting this on the last day of the contest (and I apologize profusely for that), you can also participate by just donating money to the <a href="http://www.ginadepalma.net/The_Cowgirl_Cure_Foundation.html" target="_blank"><strong>Cowgirl Cure Foundation</strong></a>.</p>

<p style="margin-bottom: 0in;">We raised a toast to Gina and Autumn by sipping some nice and sparkling Italian Prosecco with our tart dinner! If you are looking for some delicious fall flavors, this tart has it all, apples, chard, cheddar and caramelized onions. <a href="http://www.leftoverqueen.com/2008/10/09/baking-for-breast-cancer-awareness-apple-chard-quiche" target="_blank"><strong>For the recipe, click here </strong></a>. As for the crust recipe, I adapted it from <a href="http://vegetarian.about.com/od/glutenfreedesserts/r/noglutenpiecrus.htm" target="_blank">a recipe on About.com</a>. The flavor was amazing, but the crust did stick to the tart pan. So I would suggest using butter (I used oil) to grease the pan with. If anyone else has other suggestions for greasing tart pans, I would love to hear them!</p>

So I put the recipes on a slip of paper, put them on the floor and the first one he sniffed was the winner! Well it looks like Peperoncino wants some Octopus! <p><strong>PierOgi Pasta</strong></p>

<p>Here is a great fall pasta dish, that is so satisfying and chock full of veggie goodness. My best friend Jen, who lives in MA  is Polish and all the women in her family get together the Saturday after Thanksgiving and make Pierogi for Christmas.  I have always thought this is a wonderful family tradition. I love Pierogi, but have never made it myself. A long time ago, when I still lived in MA I was at Jen&#8217;s house&#8230;she was making a dish for dinner that she called Lazy Man&#8217;s Pierogi, which was from what I can remember: sauteed cabbage, onions and mushrooms tossed with sauerkraut, cottage cheese and egg noodles. It looked and smelled great and I always put it on the back burner for a &#8220;someday recipe&#8221;. Well that day came. But I decided to change it up a little.</p>

<p>I sauteed the cabbage, onion and mushrooms like she did. Then I added sauerkraut, some leftover tomato sauce and some Greek Yogurt. I cooked it all down until it was soft but still crunchy and then added whole wheat tortellini to it and continued to cook it for another 10 minutes so the tortellini had time to steam in the juices. I seasoned everything with salt, pepper, cumin and paprika. It turned out great and made enough to feed a small army! We loved it and it is something I will certainly be making down the road again! Plus I get to see Jen a week from today, when we head up north for our yearly trip to New England! <p>Here is my <a href=" http://www.leftoverqueen.com/2008/09/16/o-foods-for-ovarian-cancer-awareness-month-contest/" target=blank><strong>O Foods</strong></a> recipe. <p>Quick breads are like cake to me. I am not a big fan of icing and so for me the subtle sweetness that quick breads offer is perfect for me. I love the idea of banana bread and there are variations on banana bread wherever you turn, but I am not a lover of bananas. For some reason I just never really got into them. I find that their taste overpowers everything and for me they mess up and overwhelm and ruin the flavor of smoothies to quick breads.  I understand that they add sweetness and bulk, and are great for binding ingredients together. But I am still plagued by childhood memories of the banana in my lunch box that made my turkey sandwich taste like bananas, and my chips too! </p>
<p>So when I came across a recipe for oatmeal date carrot mini muffins, I knew that I wanted to experiment with making it a quick breakfast bread. It is chock full of great ingredients that are healthy and delicious! I changed it up a bit using what I had and it turned out moist, flavorful and filling. This is a great bread for breakfast or snacking and perfect for an afternoon spot of tea (or coffee). </p>

<p><strong>INGREDIENTS:</strong></p>
<p>1 1/4 cups quick cooking oats or rolled oats<br />
1 1/4 cups milk<br />
2 eggs<br />
1/3 cup hazelnut oil (or rice bran oil)<br />
1 carrot finely grated<br />
3/4 cup packed brown sugar<br />
3/4 cup of chopped dates and raisins mixed<br />
3/4 cup white chocolate chips (leftover from a DB challenge &#8211; figured they wouldn&#8217;t be as offensive in a bread)<br />
1/2 cup pine nuts<br />
1/2 cup shredded unsweetened coconut<br />
3/4 cup unbleached all purpose flour<br />
3/4 cup whole wheat flour<br />
3 1/2 teaspoons baking powder<br />
1 teaspoon salt<br />
1 teaspoon ground cinnamon<br />
1/2 teaspoon nutmeg</p>
<p><strong>METHOD:</strong></p>
<p>Combine oats and milk in a large bowl and let stand for 15 minutes.</p>
<p>Preheat oven to 400 degrees F . Grease the bread pan. Into oat &#038; milk mixture bowl, add egg, oil, brown sugar, grated carrot, chopped dates, raisins, white chocolate chips, pine nuts and coconut.</p>
<p>In a separate bowl combine regular flour, whole wheat flour,  baking powder, salt, and cinnamon and nutmeg. Mix to combine.</p>
<p>Add the bowl of dry ingredients to the large bowl of wet ingredients and stir only until everything is moist (do not over stir). Pour batter into bread pan. </p>
<p>Bake at 400 degrees F for about 55-65 minutes . Stick a toothpick in the center, if it comes out clean- it is done. Remove from oven and let cool &#8211; remove from the pan.</p>
<p>Cook times for other types of breads/muffins:<br />
(this is floridagirlinsydney&#8217;s  standard guideline chart she use for all bread/muffins)</p>
<p>10-12 minutes for mini muffins<br />
30-40 minutes for mini-loaves<br />
55-65 minutes for regular loaves<br />
10-15 minutes for mini-muffins<br />
25-35 minutes for regular size muffins</p>
<p>(Stick a toothpick in the center and if it comes out clean, they are done).</p>

A few of us decided that we wanted to lend Gina our support by raising awareness through the blogosphere &#8211; because that is what bloggers do best! Michelle from Bleeding Espresso got in touch with Gina to see how we could help.</p>
