<p>I have a few food goals this year; one is to start creating meals solely from the pantry and freezer. We are fortunate to be well stocked in those areas – for the past two years we have been buying whole or half animals for meat and also started raising a batch of meat chickens every summer and I do a lot of canning, preserving and freezing (as well as storing root vegetables) from our summer garden.</p>
<p>But I am like every other foodie, I love going food shopping and I found that every few weeks, when we would go, I would come home with enough stuff to basically feed us without dipping into the reserves too much. I was cooking the meat, using some core products from the pantry but kind of turning a blind eye to the preserves and such. I guess that is the folly of this modern world, where even those of us who are hyper-aware about where our food comes from, who take extra time and effort to grow food and preserve it and who cares deeply about sustainability still can be dazzled by all the fresh fruits and vegetables at the markets. Humans can be so silly sometimes…</p>
<p>I decided that this pattern of mine had to end.  So I started by pretending that my house was the market, and I started shopping here and realize that we have so much bounty! I also started going through all my many shelves of cookbooks and marking recipes that I would like to try. Then I took the next step, and actually make a document, listing and categorizing the recipes. Then once a week, we look at the list and pick out several things to try – maybe 3 dinners, some breakfast and lunch ideas, a dessert or two, several sides or salads, that kind of thing. Then I put the meals on a dry-erase board and that is our menu board for the week, leaving some days open for spontaneity and of course pizza night (every Friday).</p>
<p>This is a creation I came up with on my own, but I think in the coming months you will see that I am drawing inspiration from many cookbooks of various genres. I am excited about this project as it is keeping me creative and entertained in the kitchen, exploring some new cuisines I haven’t spent much time with lately and learning some new techniques.</p>
<p>This dish is very simple and extremely flavorful. The best part is that everything I needed was at home. The chicken is one we raised and the other items came from the pantry or freezer. Since we live in a rural area, we have found that shopping in bulk (through Amazon Prime, mostly) saves us a lot of time, money and gas, so we stock up on interesting things, like artichoke hearts. I hope you enjoy this recipe, good enough for Sunday night dinner, without much effort.</p>
<p><strong>INGREDIENTS:</strong></p>
<p>1 TBS lard (When I am browning meat I like to use lard, so I can get it nice and hot without smoking – and lard from healthy animals can be a healthy part of your diet in moderation – no Crisco! That is not real lard).</p>
<p>4 whole chicken legs</p>
<p>Salt, thyme and basil to taste</p>
<p>1 tsp red wine vinegar</p>
<p>1 can of artichoke hearts (we use Native Harvest – their cans are BPA free)</p>
<p>½ a leek, sliced thin</p>
<p>1 clove of garlic, minced</p>
<p>1 jar or can of chick peas (I use dry beans, soak them, partially cook them and then freeze them in canning jars for easy use, but you can use canned if you like)</p>
<p>1 can of diced tomatoes (a small can – I know Eden Organics has BPA free cans available)</p>
<p>1 bay leaf</p>
<p>Salt and pepper</p>
<p>Olive oil</p>
<p><strong> METHOD:</strong></p>
<p>Preheat oven to 350 F. Heat a cast iron tagine, cast iron skillet or dutch oven on low for about 5 minutes (this makes it hot but prevents burning) and add the lard. Rub the chicken legs with the herbs and spices. Brown chicken on all sides and drizzle with red wine vinegar. Add the artichoke hearts, leeks, garlic, chick peas, tomatoes and bay leaf, season with salt and pepper and drizzle with olive oil. Place the lid on and let slow cook for 2 hours. Serve with bread and butter.</p>

<p>Last night we celebrated <a href="http://www.leftoverqueen.com/2011/01/27/burns-supper" target="_blank"><strong>Burns Night</strong></a> , the 25th of January, the birthdate of the famed Scottish poet, Robert Burns. It is a night when Scots all over the world celebrate his life, poetry and all things Scottish by hosting a traditional Burns Supper – haggis, neeps, tatties, and a whisky toast!<br />
This is a treat I look forward to every year. Living across the pond, in the US, haggis is not readily available, but I have been lucky to find <a href="http://www.scottishgourmetusa.com/" target="_blank"><strong>Scottish Gourmet USA</strong></a> an online retailer of not only some of the best haggis in the US, but many other delicious Scottish products as well, like honey, cheese, smoked salmon, teas, etc. If you love Scottish food, I suggest you check them out!</p>
<p>We started the night off with <a href="http://www.leftoverqueen.com/2010/03/31/recipe-scottish-oat-cakes " target="_blank">homemade oat cakes</a>, slices of<a href="http://en.wikipedia.org/wiki/Dubliner_Cheese " target="_blank"> Dubliner </a>and chunks of <a href="http://en.wikipedia.org/wiki/Bergenost" target="_blank">Bergenost </a>. I figured since I didn’t have any Scottish cheese lying about, I would seek close relatives, so we went with Irish and Norwegian (learn about the relationship between the Vikings and the Scots in regards to cheese <a href="http://www.leftoverqueen.com/2011/07/06/my-first-cheese-opus-gruth-dhub-and-flowery-crowdie" target="_blank">here</a>). We washed the first course down with some <a href="http://www.thistlycrosscider.co.uk/" target="_blank"><strong>Thistly Cross Hard Scottish Cider</strong></a>.</p>
<p>Then it was time for the main course, haggis, neeps (mashed rutabaga) and tatties (mashed potatoes).</p>

<p>Now before you all start in with that “yuck” or “ick” word again, like when I talked about my love for<a href="http://www.leftoverqueen.com/2012/01/16/black-pudding-stew-and-bannocks" target="_blank"> black pudding</a> , let me tell you that haggis is really nothing more than a wonderfully spiced sausage. The haggis by Scottish Gourmet USA, contains lamb, liver, oats and spices, nothing else…and YES, I have had the “real deal” in Scotland, and honestly it tastes very much the same. It has a wonderful creamy texture and the aroma is tantalizing. This is real, hardy, stick to your bones kind of food, for real, hardy people! This is traditional, ancestral food at its best! Burns makes this quite clear in his famous address and I must concur! :</p>

<p>Of course before eating, the haggis must be addressed (to see the whole address performed excellently, I suggest <a href="http://www.youtube.com/watch?v=FAk_Nj8NEic&amp;feature=youtu.be " target="_blank">checking out this one </a>performed by Andrew of Scottish Gourmet USA) and then toasted with whisky. This year we toasted with a 15 year Dalwhinnie. It was a good one.</p>

<p>This year I fell in love with leeks. I have cooked with them before, but not often. I know it might sound strange but leeks intimidated me. There are all these stories about how you have to clean them so well, etc. and I just didn’t think they were worth it. I know, go ahead…*gasp*</p>
<p>I have since learned the error of my ways. This year, our CSA grew leeks and so they were on offering every week and more plentiful than onions, so I started really using them a lot. I have come to adore their wonderful sweet flavor and they looks so beautiful in dishes – and cook much faster than onions.</p>
<p>Some of my favorite dishes to use leeks in are the <a href="http://www.leftoverqueen.com/2012/01/03/buckwheat-noodles-with-mushrooms-and-sour-cream" target="_blank">Buckwheat Noodles with Mushrooms and Sour Cream</a> that I shared last time and basically anything with potatoes…these fritters being right up there. We grew a wonderful crop of 4 varities of heirloom potatoes this year, and I must admit they are the best potatoes I have ever eaten. So flavorful and wonderfully earthy. I now understand why the French call them <em>pommes de terre</em> or apples of the earth.</p>
<p>I should have posted this as a leftover holiday dish, but honestly these are so good, that they are worth making mashed potatoes for! We enjoy these alongside eggs for breakfast, or for dinner as a side dish. In fact, they could probably be perfectly satisfying as a main dish! Just make them!</p>

<p><strong>INGREDIENTS:</strong></p>
<p>2 cups of smashed potatoes (I like gold fleshed potatoes for this)<br />
1 large egg, scrambled<br />
½ cup of sliced leek rings<br />
Salt and pepper to taste<br />
1 tsp of herbs de Provence<br />
½ to ¾ cup of garbanzo bean flour &#8211; enough so that the patties are easy to form<br />
Lard or butter for frying<br />
Sour cream or hot sauce (or both!)to garnish</p>
<p><strong>METHOD:</strong></p>
<p>Heat up a cast iron skillet on low until nice and hot. Mix all ingredients in a bowl and shape into patties (will make about 8-10 depending on how big you make them). Place lard or butter in the pan and melt and fry patties on each side for a total of about 5-7 minutes per patty. I generally have the oven at 250 F and put the finished patties in the oven to stay warm. Serve with sour cream/hot sauce and enjoy!</p>

<p>Now that the hub-bub of the holidays is winding down, I know I am looking forward to more simplicity when it comes to meal times and I am craving earthy dishes to offset the sweets I have been eating. Although I love the holiday season and all of its indulgences, after several weeks of big celebratory meals, it is nice to get back to basics.</p>
<p>This dish has become one of our favorites, we eat it about once a week. It is a quick and easy go-to kind of meal when you are tired and just don’t know what to cook! We came up with it during the holiday season, when we were busy and/or tired of cooking. It is perfect now also for winding down and simplicity.</p>
<p>I must admit I am not a huge fan of pasta…my guess is because my body knew I was gluten intolerant long before I did, and so subconsciously it dreaded that king of all gluten-ey dishes…the big bowl of pasta. But I am seriously addicted to this bowl of soba noodles mixed with sweet leeks fried in brown butter, deeply earthy mushrooms and thick and creamy sour cream. So so good, you will love it.</p>

<p><em>A note of caution, if you are gluten-intolerant make sure that the package of Soba or Buckwheat noodles you throw in your basket is in fact gluten-free. Oftentimes, I find packages that also contain wheat.</em></p>
<p><strong>INGREDIENTS:</strong></p>
<p>2 TBS of browned butter (to make browned butter, place butter in a small saucepan and melt, keep cooking past melting until the butter begins to brown, once is smells sweet and delicious, take it off the burner, it is ready to use)<br />
1 cup of reconstituted dried mushrooms, squeezed dry (keep the water to make mushroom stock or use in other recipes) – chop if the pieces are really big<br />
½ cup sliced leeks (you could also use caramelized onions)<br />
1 large clove of garlic, finely minced<br />
1-	 8 oz. package of Soba Noodles (I use King Soba Organic Sweet Potato and Buckwheat Noodles)<br />
½ cup organic full-fat Sour Cream (Greek yogurt would work beautifully as well)<br />
Grated parmesan cheese to taste<br />
1-2 more TBS of butter to mix in your pasta</p>
<p><strong>METHOD:</strong></p>
<p>Start your pasta water. Make the browned butter, then sautee the mushrooms over medium heat  in the butter for about 5 minutes, or until nice and soft, then add the leeks and garlic, sautee another 5 minutes.  Now cook your pasta – it only takes about 3-5 minutes. Once it is finished cooking, drain the noodles and add them to the skillet with the vegetables. Add the sour cream, parmesan cheese and extra butter, mix and serve.</p>

<p><em>I have been following Rosa’s blog for many years now, since I became a food blogger, actually (her blog has been around a lot longer than mine). Her creative, vibrant and flavorful recipes have always kept me coming back for more and inspired me as a budding blogger. In fact her participation in the Daring Bakers and the beautiful things she made, prompted me to sign up and bake with them for a few years, too! Rosa is not afraid of flavor, spice or color in her dishes and there is always a side of pizazz to go with it! Clearly I admire her.</em></p>
<p><em>Besides kitchen creativity, Rosa is also well known for her amazing photography, not only of food, but also the countryside of Geneva, Switzerland where she lives. Besides food we share a love of all things Scandinavian, genealogy and nature. <p><em>I have known the lovely </em><strong><em><a href="../about-the-queen">Jenn Campus</a></em></strong> <em>for quite a while now and have been visiting </em><em>&#8220;</em><strong><em><a href="../">The Leftover Queen</a></em></strong><em>&#8221; since its launching in 2</em><em>007. During all those years I have followed her adventures striving towards the goals of sustainability, preparing traditional foods and seasonal feasting, and have</em><em> admired her courage when she moved to Northern Vermont in order to live</em><em> out her dream and become self-sufficient (growing her own vegetables as well as raising her own animals).</em></p>
<p><em>So, the day Jenn asked me to write a guest post for her there was no way I was going to refuse her generous offer as I hold her ideas (ideals) in esteem, envy her countryside lifestyle and share similar visions with this captivating young lady who is extremely knowlegeable reagarding all things linked to Nature and homesteading. It is a real honor for me to be invited into her awesome space. </em></p>
<p><em>As she advocates healthy eating and enjoys creating culinary delights based on simplicity as well as everyday</em><em> foods that can be traced locally and respect the earth’s cycles, I thought that it would be a brilliant idea to invent a potato salad which could be adapted according to what’s on the stalls of your regional farmers markets and savored as a fulfilling main course that can stand alone.</em></p>
<p><em>I have always been an immense fan of spuds and worshipped them because they are marvelously versatile, nourishing and delicious. There are so many varieties available and an astonishing number of amazing dishes can be made with them. Without a doubt, it is the king of vegetables.</em></p>

<p><em>Other ingredients I very much idolize and venerate are </em><em><a href="http://i%20have%20known%20the%20lovely%20jenn%20campus%20for%20quite%20a%20while%20now%20and%20have%20followed%20her%20since%202007%20when%20%22the%20leftover%20queen%22%20was%20launched.%20during%20all%20those%20years%20i%20have%20followed%20h%20/">tahini</a></em><em>, peppers, nuts, paprika and mustard. They literally make my world turn and I cannot imagine my extraordinarily well-stocked pantry and fridge being devoid of them (of course, I buy bell peppers solely from July to October). </em></p>
<p><em>Good food and good eating aren’t a class thing – anyone can eat good food on any budget as long as they know how to cook.</em></p>

<p><em>Thanks to my immense collection of condiments, herbs and spices (it is an addiction), my cuisine is intensely savory, makes good use of seasonings hailing from all over the world, is highly inventive, ecclectic and can be described as &#8220;fusion&#8221;, yet those are not the only aspects which characterizes it. Budget-friendliness is also an integral part of my style of cooking as I only have an acutely limited amount of resources I can spend on groceries every month. This forces me to juggle like crazy and find ways of getting more for less. It means that I never eat meat or fish more than once a week (generally lower cuts or bargain spicimens) and have to manage my larder intelligently.</em></p>
<p><em>Nonetheless, being restricted money-wise and following good existence habits doesn’t obligatorily mean that you have to eat like an austere monk on a strict diet, a New Age prophet living on love and fresh air nor restrain your kitchen activity and stop concocting exciting meals. Quite the contrary. It is indeed absolutely possible to count your pennies as well as satisfy your body and soul simultaneously with refined and tasty grub (please read my </em><em><a href="http://www.theramblingepicure.com/archives/4727">article</a></em><em> &#8220;13 ways to eat on a budget and improve your health at the same time&#8221; that was published on </em><em><a href="http://www.blogger.com/goog_2138679781">T</a><a href="http://www.theramblingepicure.com/">he Rambling Epicure</a></em><em>).</em></p>

<p><em>I strongly believe that in this period of global financial crisis, more people should be concerned about learning how to survive hard times and to reduce their consumption costs by being more aware of what can be done in order not to throw their dollars/Euros/Francs out of the window, yet without compromising on the nutritional quality the of their dinners and on self-indulgence. Our ancestors were forced to find methods to get through dearth, so there we should maybe start learning from them as their teachings could prove useful in the future &#8211; the impacts this behavior has on our environment are either not negligible&#8230;</em></p>
<p><em>So, the harmoniously tasting (sweet, sour, salty &amp; hot), quirky, colorful and elegant &#8220;<strong>Tahini, Pomegranate And Coriander Potato Salad</strong>&#8221; I am presenting here today englobes all of those aspects. It provides cheap nourishment, incredible gustative pleasure and is well-balanced, especially if paired with proteins such as fish, meat or eggs.</em></p>
<p><em>Most potato salads contain mayonnaise and, although I have nothing against this practice (I am a big fan of the homemade version), I preferred to whip up a dressing with sesame paste which offers a similar creaminess than its calorific counterpart, but is a lot less fattening and adds a delightful nuttiness to the whole dish. Then, for more color, crunch and sweetness I incorporated a grated carrot, a handful pomegranate seeds and a thinly sliced red bell-pepper (see comments for more info), and for extra gusto and dimension I used plump walnuts, sweet German mustard (or &#8220;</em><em><a href="http://www.germandeli.com/haendelmeier1.html">Weisswurstsenf</a></em><em>&#8220;), </em><em><a href="http://en.wikipedia.org/wiki/Paprika">pimentón</a></em><em>, finely chopped leftover smoked ham and fresh coriander.</em></p>
<p><em>The result was electrifying and even my boyfriend who is not the biggest fan of potatoes in their boiled form was impressed by my invention and had seconds, and even thirds. As a matter of fact, the salad disappeared as fastly as it arrived on the table!</em></p>

<p>Serves 2-3 people.</p>
<p><strong><em>Ingredients For The &#8220;Salad&#8221;:</em></strong><br />
750g Small firm potatoes<br />
1 Medium Carrot, coarsely grated<br />
1 Red bell pepper, cubed (see comments)<br />
1 Medium red onion, cut into thin rings<br />
30-40g Smoked ham, finely chopped<br />
50g Walnuts, coarsely chopped<br />
A big handful (or to taste) pomegranate seeds<br />
Fresh coriander, chopped, to taste<br />
<strong><em>Ingredients For The &#8220;Dressing&#8221;:</em></strong><br />
3 Tbs Tahini<br />
3 Tbs Milk<br />
1 Tbs Water (or more if the dressing is too thick)<br />
1 Tbs Malt vinegar<br />
1 Tbs <a href="http://www.theworldwidegourmet.com/products/articles/german-mustard/">German sweet mustard</a> (or <a href="http://food-drink.twenga.com/whole-grain-mustard.html">French old-fashioned mustard</a>)<br />
1 Tbs Olive oil<br />
1 Tsp Horseradish cream sauce<br />
1 Tsp Worcestershire sauce<br />
1/2 Tsp Sugar<br />
1/3 Tsp Smoked paprika<br />
1/4 Tsp Onion powder<br />
Salt, to taste<br />
Pepper, to taste</p>

<p><strong><em>Directions For The &#8220;Dressing&#8221;:</em></strong><br />
1. Mix all the ingredients together, until you get a thickish mayonnaise-like sauce.<br />
<strong><em>Directions For The &#8220;Salad&#8221;:</em></strong><br />
2. Cook the potatoes in water until tender. Drain them and let them cool until tepid, then cut them in two, lengthwise.<br />
3. Delicately mix all the ingredients together and add the sauce.<br />
4. Serve and decorate with a little extra coriander.</p>
<p><strong><em>Comments:</em></strong><br />
I used small Charlotte potatoes, but you can also use waxy potatoes such as Désirée, Nicola, Bintje or Kipfler that are perfect for making salad.<br />
I made this recipe when bell peppers were still in season. As they are now out of season, I recommend you to replace them by either 1 1/3 cup fresh muscade pumpkin cut into small cubes or thin matchsticks, raw betroot cut into thin matchsticks or finely shredded Brussel sprouts.<br />
If you wish, you can substitute the walnuts with any nut of your choice.</p>
<p><strong><em>Serving suggestions:</em></strong><br />
Serve alone as main course or accompanied with smoked fish (salmon or mackerel), rollmops, small shrimps, cold meat or hardboiled eggs.</p>

<p>You know how Red Velvet cakes have been all the rage these past few years?  That bold red color certainly makes a statement and looks so inviting. When I realized it was only vanilla cake dyed with red food dye, it totally lost its luster for me. A cake filled with artificial dyes that can be harmful to some people just doesn’t get me all that excited, to tell you the truth, no matter how cute it is. In fact, now, every time I see a recipe for Red Velvet Cake, I get a little angry, now it makes me SEE red!  So imagine how intrigued I was when I heard about this cake from a fellow CSA member. A red colored cake that was made with natural ingredients, and gives you the nutritional benefit of the beautiful beets as opposed to filling your body with a large dose of chemicals in every bite.</p>

<p>This is a beautiful, unique and delicious cake recipe that was created by one of our fabulous CSA farmers, Emma. Emma and Ben planted a wonderful CSA for us, their members, this year. Even though we grew our own garden, it wasn’t big enough to allow for extra to preserve and we all know <a href="http://www.leftoverqueen.com/2010/09/16/food-preservation-or-%e2%80%9cmy-life-as-a-squirrel%e2%80%9d " target="_blank">how much I love preserving</a>! This was their first year doing a CSA and they did a perfect job! <p>You can see<a href="http://hatchbrook.wordpress.com/2011/07/17/emmas-signature-vanilla-beet-cake/ " target="_blank"> Emma’s Original Recipe here</a>, but I had to modify it a bit to make it gluten free. It is a wonderfully moist cake that I think would lend itself beautifully to a nice cream cheese frosting. You don’t taste the beets in it, if anything; the beets add an extra wonderful earthy sweetness.  If you really want to wow your guests this holiday season, this cake will do it! <img src='http://www.leftoverqueen.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>&nbsp;</p>
<p><strong>INGREDIENTS: </strong></p>
<p><em>For the Cake:</em></p>
<p>2 C beet puree – I roasted the beets at 400 for about 40 minutes and then pureed, roasting brings out the natural sugars in the beets.<br />
1 ½  C GF oat flour<br />
1 C coconut flour<br />
3 tsp. baking powder<br />
1 ½ cups pure maple syrup<br />
½ C melted butter or coconut oil<br />
1 tsp. pure vanilla extract<br />
3 large eggs<br />
¼ tsp. cinnamon</p>
<p><em>For the Glaze:</em><br />
¼ c melted butter<br />
¼ c melted coconut oil<br />
¼ c maple syrup<br />
Maple confectioner’s sugar to dust</p>
<p><strong>METHOD:</strong></p>
<p>Preheat oven to 375 F. Mix all the cake ingredients together in one bowl. Emma suggests you use your “batter intuition” if it looks loose, add more flour and baking powder to match. Then pour into a prepared cake pan (I used a traditional round).  Bake at 375 F for 45 minutes or until a toothpick comes out clean. Allow to cool a little bit. I didn’t and so my frosting just kind of sunk into the cake, which wasn’t too terrible of a thing to happen! <img src='http://www.leftoverqueen.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>For the frosting, Emma mixes together 1/2 cup of butter, maple, and  confectioners’ sugar and applies it when the cake is still warm so it  melts in to a glaze. I liked the addition of a bit of coconut oil as  well and I used maple confectioners’ sugar.<br />
I think it would be wonderful to double the recipe and make a layer cake  with cream cheese- maple frosting. At least that is what I am doing  next! <img src='http://www.leftoverqueen.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>I an urban homesteader and she a homesteader.  Besides a shared appreciation of worm castings and poop, what I enjoy about Jenn is her love of fine cooking.</p>
<p>As much as I adore to work in my organic gardens and raise backyard urban chickens for eggs and meat, I find joy when I&#8217;m able to share the fruits of my labor with family and friends at the dinner table.</p>
<p>When Jenn asked me to share a simple seasonal recipe, I decided to share with you something special using end of the season eggplant and cherry tomatoes.</p>

<p>Eggplant has a sort of villain/superhero kind of reputation.  Some love it while others despise the notion of even looking at such an odd fruit that comes in so many shapes and sizes.</p>
<p>I enjoy eggplant and find that as long as it&#8217;s cooked along side other vegetables and herbs, it brings out the best in it&#8217;s texture and flavor.</p>
<p>A sure way to make any vegetable pleasing, including eggplant, is to roast them sprinkled with celtic sea salt and drizzled with extra virgin olive oil.</p>

<p>It deepens their flavor and when it comes to eggplant, gives them a bit more sustenance without the creaminess.</p>
<p><strong>An End of the Season Roasted Eggplant, Tomato and White Bean Salad</strong></p>
<p>&nbsp;</p>

</strong></p>
<p>This is a simple salad to make using white navy beans, tuna, roasted eggplant and tomatoes.  It&#8217;s mixed in a balsamic vinaigrette and topped with feta cheese and fresh cut rosemary.  Deep and vibrant it makes a perfect side dish for a busy weekday meal.</p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>1 cup white navy beans</li>
<li>1 can tuna</li>
<li>1 eggplant, diced</li>
<li>20 cherry tomatoes (use      some green unripened tomatoes if you have them), cut in half</li>
<li>1/4 cup balsamic vinegar</li>
<li>1/2 cup extra virgin      olive oil</li>
<li>1tbls fresh cut      rosemary, minced</li>
<li>Salt and pepper to taste</li>
<li>Feta cheese to garnish</li>
</ul>
<p>Method:</p>
<p>1. In a baking dish, add the diced eggplant and half cherry tomatoes.  Sprinkle with sea salt and drizzle with extra virgin olive oil.  Roast in a 375F oven for 25 to 30 minutes.  Once roasted, remove from the baking dish and set aside.</p>
<p>2. In a large bowl, mix the beans, tuna, roasted eggplants and tomatoes.  Add the balsamic vinaigrette, olive oil and fresh cut rosemary.  Add salt and pepper to taste and toss well.</p>
<p>3. Garnish with Feta Cheese.</p>

<p>First off, I must say that I am very Excited to have been asked to write a post over here at Jenn&#8217;s place.  I&#8217;ve known Jenn online since we were both miserable in Florida (apologies to any Florida lovers out there).  Now, we&#8217;re both happy&#8211;me in North Carolina and her in Vermont. Which I&#8217;m a little jealous about, since I have always had a non-specific but real Desire to visit Vermont.  At any rate, I am happy that these words, at least, are on a blog that originates from The Green Mountain State. Thanks for having me, Jenn, and hello to all of Jenn&#8217;s readers!</p>

<p>When Jenn asked me to write a guest post, I knew that I wanted to make something utilizing local ingredients.  And that, of necessity, means that if you don&#8217;t live right around here, you can&#8217;t use exactly what I use.  But that&#8217;s okay.  It&#8217;s more than okay, actually.  It&#8217;s the way it should be.  Pricey gourmet shops have sprung up like mushrooms because the Fancy cook book or magazine recipe says that you have to use pollen from Peruvian llacon* or the leaves of the Malaysian pandan tree*. But cooking should be local.  It should be about what is growing in your yard, or your neighborhood or your community.</p>
<p>So, if you live in Peru, go harvest some llacon pollen.  If you&#8217;re Malaysian, by all means use pandan leaves.  But if you can&#8217;t find those things, don&#8217;t let it limit you.  Let it free you to do your own experimentation.</p>
<p>Let me just say now that I am not a homesteader. I don&#8217;t make my own kefir or yogurt. And I don&#8217;t own goats. I think it is the Height of Awesome that Jenn is living her dream, but I know my limitations.  I am limited by a Procrastination Gene that prohibits me from working too hard.  Being a procrastinator does not mesh well with being a homesteader.  We do keep chickens, but only for eggs. And God forbid we try to have goats.  I hear they can&#8217;t wait until I finish Lounging to be milked.  So, we try to buy happy meat or no meat at all.  Happy meat, by the way, is my short-hand way of saying &#8220;naturally raised, antibiotic-free, hormone-free, romping-in-pastures, eating a natural diet, allowed-to-have-sex animals who lived carefree lives. Until they were slaughtered in as humane a way as possible.  So we can eat them.&#8221; But that takes a long time to say, let alone type, so I normally just go with Happy Meat.</p>
<p>I&#8217;m happy to buy what I don&#8217;t have the time &#8211;or want to take the time&#8211;to make, and I try to strike a balance between local/organic and cost-effective. It&#8217;s not always easy, but I feel like we generally do a good job.  And we eat pretty well, if I do say so myself.</p>
<p>As a matter of fact, sometimes my tendency to procrastinate results in a Surprisingly Yummy Meal.  Take, for instance, last night&#8217;s meal.  I knew that my husband and I had to attend a class at our chiropractor&#8217;s office at 6:30.  I knew it all day long.  Until I finally stopped <em>knowing</em> and started <em>realizing</em>, at about 5:45, that I should probably make something to eat because we&#8217;d have to be Out The Door by 6:20 to get there on time. And once I am committed to action, there is no stopping me.</p>
<p>Here&#8217;s what went on in my brain:</p>
<blockquote><p>Okay, pasta is fast.  It&#8217;ll take about 6 minutes for the water to boil and another 10-11 for the pasta to cook.  In that amount of time, I can have a reasonable meal on the table.  What to do&#8230;what to do.  Oh, there&#8217;s a lovely pepper from Roberta&#8217;s garden (next door neighbor)! And we have marinated feta from Prodigal Farm.  Onions&#8230;half&amp;half&#8230;olive oil.  Oh, eggs! I&#8217;ll beat an egg and add it in with the sauce to make a kind of carbonara-type deal.</p>
<p>Heat a pan&#8230;chop some onions&#8230;add some olive oil. A lot of olive oil.  Toss in the onions to sweat&#8230;cut the pepper into strips but reserve them so they stay crisp.  Turn the heat down and melt in some of the feta.  Wow, that doesn&#8217;t melt too, well. Oh, well, it&#8217;ll taste Amazing and should mix in well with the half&amp;half and egg&#8230;</p></blockquote>
<p>I won&#8217;t subject you to any more of my crazed stream of consciousness mental cooking chatter. Suffice to say that the meal was Quite Good. It was a bit rich, but the barely-cooked peppers added a nice green counterpoint to all the dairy goodness.  And if you&#8217;re gluten-free, you can absolutely sub rice pasta for the wheat pasta. I&#8217;ve had a lovely rice penne from Trader Joe&#8217;s, and penne would work really well in this recipe.</p>

Probably not. But you will be able find some sort of vegetables.  (Asparagus would be perfect for this. Now I have to wait for spring&#8230;) And you will be able to scare up some cheese and some milk (or cream or half&amp;half) and an egg.  Use whatever short, fat pasta you have on hand, and prepare to Wow your family.   You don&#8217;t need to wait until the last minute to make this, but I find that victory is so much sweeter when you have to rush a little!</p>
<p><strong>Procrastinators&#8217; Delight: Orecchiette Carbonara<br />
</strong><em>Carbonara usually contains bacon, and you can certainly add it here. I left it out because it was one extra step between me and dinner and being on time. </em><em>This served 2 generous portions. Scale accordingly to serve 4, 6 or even 8.</em><strong><br />
</strong></p>
<ul>
<li>2 Tablespoons extra virgin olive oil</li>
<li>1 clove garlic, minced</li>
<li>1/4 cup chopped onion</li>
<li>salt and pepper, to taste</li>
<li>hot pepper flake, to taste</li>
<li>about 1/4 cup marinated feta</li>
<li>1/4 cup half&amp;half</li>
<li>1 small bell pepper, cut into strips</li>
<li>8 ounces orecchiette, or other short, fat pasta shape</li>
<li>1 egg, beaten with about 1 tablespoon half&amp;half</li>
</ul>
<p>Put on a large pot of water and let it come to a boil.</p>
<p>Meanwhile, heat a skillet over medium heat and then add the olive oil, garlic, onion, salt and pepper.</p>
<p>Sweat the vegetables until soft&#8211;you might need to turn down the heat a bit as you don&#8217;t really want anything to brown.</p>
<p>Turn the heat down to medium-low, and add the hot pepper flake and the marinated feta.  Mash the feta so it sort of melts into the oil.  It will look a bit grainy.  Don&#8217;t worry, that&#8217;s how feta looks melted.</p>
<p>If your water is boiling, salt it so it tastes like the ocean, and add the pasta.  Mine took about 11 minutes to cook.</p>
<p>Add the half&amp;half to the skillet and bring the heat back up to medium.  Cook for about 5 minutes, and then add the vegetables.  You want them warm but still crisp, so how long you let them cook will depend on what vegetables you choose.  If you&#8217;re using spinach, it&#8217;ll only need a minute or two.  I let the pepper strips cook for about 5 minutes over medium heat.</p>
<p>When the pasta is ready, reserve about 2 tablespoons of pasta liquid and drain the rest.</p>

Add the drained pasta and toss everything together over medium-low heat until the pasta is nicely coated.  Do this fairly quickly and keep everything moving so you don&#8217;t end up with scrambled eggs.</p>
<p>And that&#8217;s really it.  Pair this with a nice green salad, and you&#8217;ve got a lovely meal.  If you&#8217;re me, plop some on a plate, be grateful and then inhale it so you&#8217;re not late to the chiropractor&#8217;s office.</p>
<p>And, whether or not you are Plagued by the Procrastination Gene, it&#8217;s nice to know that you can have this meal on the table in about 20 minutes.<br />

<p>Everybody has heard the old saying, that during the summer, people’s squash plants grow so rapidly and abundantly, that they have to put them on their neighbor’s porches in the middle of the night just to get rid of them! Well, there is another way – which is far tastier. Just take the flowers, and make stuffed squash blossoms!</p>
<p>Well, we have been having the opposite problem in our garden this year – an abundance of beautiful blossoms, but only a few fruits just beginning. We weren’t sure – was the soil missing nutrients? Or maybe the soil temperature just wasn’t hot enough? Last year we got our squashes in too late and they were killed off by an early frost. This year we started them indoors and they turned out beautiful, but we were beginning to worry that we were going to have another dud crop this year – which would be so disappointing as we planted a TON for winter storage.</p>
<p>So I started doing some research into the matter. There are male and female squash blossoms and in the beginning of the season, the vine produces primarily male blossoms. The females are the fruit producing blossoms, and the males, do not produce fruit. I learned that it is the pollen from the male blossom that is needed for the female blossom to turn into fruit. This of course is done by bees and other insects, which is why the bee issue is so important to gardeners (and should be to anyone that eats). Luckily, both male and female blossoms grow on the same vine, and so if there are enough bees buzzing around, there shouldn’t be any pollination problems.</p>
<p>How can you tell a female blossom from a male? Female blossoms have a bump or immature mini fruit between the blossom and the stem, and the males lack the bump.</p>
<p>So if you have too many fruits, you can use some female blossoms to make the stuffed blossoms. If you don’t want to lose any fruits, be sure to use the male blossoms, since those will not produce fruit anyway.</p>
<p>This is perfect for a quick and easy summer treat. Very little prep time/work and ingredients you probably have on hand.</p>

<p><strong>Herbed Chevre Stuffed Squash Blossoms</strong></p>
<p><strong>INGREDIENTS:</strong></p>
<p>6 squash blossoms (any kind of squash will do!)<br />
¼ cup chevre<br />
1 TBS of fresh herbs minced – I used a mixture of thyme, basil and chives<br />
1 egg &#8211; beaten<br />
Olive oil<br />
Sea salt</p>
<p><strong>METHOD:</strong></p>
<p>Place about an inch of olive oil in the bottom of a skillet (I use cast iron) and heat it up slowly on low heat. Wash the blossoms and gently pat the dry, remove the blossom stamens any seeds or unwanted hitchhikers. In a small bowl mix the chevre and herbs together. Using your fingers, get a small amount of the chevre mixture and place in the blossoms (some people like piping the mixture out of a pastry bag, but fingers work just as well).  Then dip the stuffed blossom in the egg and place in the hot oil. Fry on each side for about a minute, or until brown. Remove from oil and place on a cooling rack with a paper towel to drain and sprinkle with salt. Serve immediately.</p>

<p>Have many of you bought a fish like this? With the eyes still there? This was a new experience for me. Even though I am no stranger to the cycles of life and how food gets to my plate, I never bought or ate a whole fish before.  I have not really cooked much seafood in my kitchen career, but I do enjoy it.  I love smoked fishes, and there is a store sort of near to us called <a href="http://www.healthylivingmarket.com/ " target="_blank"><strong>Healthy Living</strong></a>, that actually sells several varieties of whole smoked fishes. The last time we were there, they had this guy, for about $9, which is a steal if you are used to buying smoked fillets. So with an adventurous spirit, I bought it, bones, fins, eyes and all.</p>
<p>Funny story interlude…so Healthy Living also has a great variety of<a href="http://www.healthylivingmarket.com/departments/meat-and-seafood/ " target="_blank"> local meats and sustainable seafood</a>– things like pork, beef, venison, lamb, duck, chicken – pretty much you name it, it has probably graced their shelves at some point. So I like to go every so often, and buy a small variety. So on the day we bought Mr. Mackerel, we also bought some Highland grassfed beef, duck rillettes, some venison shanks, several packages of chicken wings, pork belly, cans of tuna, fresh marinated anchovies etc. That was all we bought – no veggies, no fruit, and no dairy. So we get to the check-out line, and our cashier was kind of scowling at us. Her lips were pursed and her nose wrinkled like she smelled something really foul. As she was scanning our box of meat, she was only touching the corners of the packages and moving them across the scanner as quickly as possible. Then it dawned on me, and I said <em>“I hope you aren’t a vegetarian”</em>, and she responded, <em>“No, I am a vegan, actually”</em>.  <strong><em>SCREEEECH</em></strong>. Talk about a clash of cultures.</p>
<p>But it really got me thinking about my days as a vegan (all 6 months of them), and I felt like, even though we take very different approaches, this girl and I both care about the welfare of animals and are taking action to opt out against the inhumane slaughter of them for human consumption. She was young, so you never know where her path might lead. When I was a vegan, and a vegetarian (for 10 years) I never in a million years would have thought I would raise animals for meat. But once I saw first-hand how animals can be raised humanely  and with love and respect, for consumption, and how feeding your family from the sweat of your brow and your own hands is more honorable than buying non-meat items that are subsidized by the government, (like soy, a major vegetarian protein and something I ate a lot of) to the detriment of us all, animals included…and when I learned enough about the natural world that I had been so disconnected from, and learned that even if I was a vegetarian, in order to eat, animals had to die, I decided there had to be a better way, a way where I could take full responsibility for the food on my plate while at the same time take my place in the natural world, as a part of it- and this is one of the reasons I do what I do on the homestead – because I love animals and because I am an animal. To the cashier that probably sounds so backwards, but I have been forward, back and back again!</p>

<p>So anyway, back to Mr. Mackerel…like I said, I love smoked fishes, and I wanted to showcase this beautiful fish in a nice spring dish. I decided on a mackerel salad. Mackerel is packed with protein and essential fatty acids. It has a nice meaty texture and smoked it is just delicious! One of our favorites. To make the salad, I mixed together half of the fish (after I opened it up, took the bones out, etc) with 2 hard -boiled eggs, capers, roasted red peppers a splash of red wine vinegar and a touch of <a href="http://www.leftoverqueen.com/2010/09/07/homemade-condiments-mayo-ketchup-and-cranberry-bbq-sauce" target="_blank">homemade mayo</a>. I then served it on a bed of greens. We dined al fresco on the porch looking at the mountain and admiring the buds on the trees, the greening of the grass and the beautiful tulips in bloom.</p>

There are some great tasting recipes in there and I have been using it ever since.</p>
<p>I have been making this dish for about 20 years now! I have only eaten something similar in one Greek restaurant that was near my house growing up –<a href="http://www.athensgrill.com/" target="_blank"><strong>Athens Grill</strong></a>, so maybe it is a regional dish? The restaurant was a family restaurant, owned by Greek immigrants from Athens. I loved their food so much and begged my mom to take me there often! We used to get gyro platters, or souvlaki served with Greek salad, pita bread and the best French fries ever. Sometimes we would eat at the restaurant, al fresco, on little wrought iron tables right off the parking lot. Other times, we would take it home to eat while watching a movie. I thought it was the best food ever. What I wouldn’t give to pop over there for lunch today!</p>
<p>In the cookbook, the name they give this recipe is <em>Fasolakia Freska</em> or Green Bean Casserole, in English. It is a simple recipe with a lot of flavor. I am making it tonight to accompany some pan seared fish. But it also goes well with chicken or beef dishes, and of course lamb. Sometimes I like to sprinkle feta cheese on it, and eat a large bowl full for lunch. This is a great recipe to double – and it is also one of those recipes that tastes all the better a day or two later. It has a large amount of olive oil in it – but don’t skimp on it – that is what makes this dish so rich and flavorful.</p>
<p>Normally I follow the recipe as is, but sometimes I might add Kalamata olives for bite, or pearl onions instead of the sliced onions, for pretty. You can also omit the potatoes, but that would be silly.</p>
<p><strong>INGREDIENTS:</strong><br />
1 lb of fresh green beans, topped and tailed (I have also used frozen with great success)<br />
1 large onion, finely sliced – or half a bag of pearl onions<br />
2 medium potatoes, peeled and cubed<br />
2 cloves garlic, finely sliced<br />
1 cup olive oil<br />
14 oz. can of chopped tomatoes<br />
Salt and freshly ground pepper<br />
This is not part of the recipe, but I usually add some oregano as well.</p>
<p><strong>METHOD:</strong><br />
Slice beans in half, rinse and drain. Sauté onion and garlic in hot oil until pale golden. Add beans and potatoes and sauté together until well coated in the oil. Add the tomatoes and seasoning. Cover and cook for 30-40 minutes or until beans and potatoes are tender, stirring occasionally. If needed, add a little hot water to keep from burning. This can be served hot, or at room temperature.</p>
