Nice entries, Elle and FOODalogue! Elle, we're on the wavelength -- I'm making a similar type of entry! I actually just made it, before reading your post, thinking myself so original. My entry will go up in the next day or so, and then you'll see!

Yes! I finally got my act together and came up with this dish. I call it Food Flag for the Royal Foodie Joust and I dedicate this to our Queen, Jenn - for her Italian roots and her recent trip back to her mother land. The pictures are pretty self explanatory as I made the dish in the fashion of the Flag of Italy. The green is Spinach pasta, the white is chicken, bacon and mushroom cream sauce and the red is roasted cherry tomatoes with basil. The mix of flavours was just as delicious as the mix of colours! I had a lot of fun making this and I hope you all enjoy this as much as I did!

Wow, Dharm!!! I am so honored! What a cool dish - all the componenets sounds really yummy on their own, so I am sure all together they were wonderful! Thanks so much for honoring me this way!

Fantastic entries so far! Yum Yum . Here is my tricoloured recipe, a typical Spanish dish: Piquillo Peppers stuffed with Cod Brandade over a Parsley sauce. Hope you enjoy it! Or maybe you want to have it as a tapa The recipe is a bit long, so if you think you might like it... why don't you come over my blog: Spanish Recipes http://recipespicbypic.blogspot.com? I'm waiting for you Good luck everybody!

I've been a bit intimidated by some of the recent ingredients for the Joust, but with such easy requirements this month, this Joust Newbie is jumping in. Here goes nothing! Grilled Margarita Pizza The full recipe is on my blog at http://pioneervalleyma.blogspot.com/2009/04/this-is-good-life.html(There - now that didn't hurt too much! )

Here's mine! Decadent Strawberry Mint Chocolate Frozen Yogurt 12 oz. fat-free vanilla yogurt (white) 6 large strawberries, washed and diced (red) leaves of 2-3 fresh mint sprigs (green) dash of lemon juice 1/4 cup chocolate chips Pulse all of the ingredients in a food processors until well blended. Process for a shorter time to create a more textured frozen yogurt, and process longer to make the yogurt smoother. Pour into your ice cream maker, following the appliance's preparation directions. Churn for 30 minutes. Makes 2 large servings, or 3-4 small servings. Read the full entry here: http://muffinlovechick.blogspot.com/2009/04/dreaming-of-spring.html
