Thanks so much everybody for your kind words and wishes Cheesy I can't wait to have my new apron on and have a toast with the mug Grin

As per Jenn's suggestion, I'm sending a dish I just made with the 3 June's ingredients. Although I'm sure you don't need any inspiration... here you have a Beans & Rice and Pimientos del Padrón.

congratulations Nuria, and your selection of ingredients sounds great though I'm going to omit the bacon since I'm vegetarian, and see what mediterranean=style recipe I can come up with!

hahah yeah, I know.. sigh, I try though! I do! I can do most cooked tomatoes sometimes, and sauce is good sometimes, but in general they really wig me out. *handing over my foodie badge* Wink

Here is my entry!  I have to admit, this tangy hummus is far tastier than I ever could have imagined (what can I say, I'm not a fan of bacon!).  But I'm seriously addicted to this new hummus creation.  The flavors meld beautifully to lend a smokey, almost mesquite flavor.  I used sun-dried tomatoes, soy bacon, and rice crackers to fulfill the requirements.  Yum!



Maple Bacon Hummus with Sundried Tomatoes

3 slices Smart Bacon, toasted for 5 minutes at 450* in a toaster oven
6 sun-dried tomatoes, soaked in hot water for 15 minutes
1 15.5 oz. can garbonzo beans, drained and rinsed
2 T maple syrup (I used sugar free)
1 T minced garlic
1 T BBQ sauce
1/2 T Worchestershire sauce
1/2 T cider vinegar
1/8 tsp Sriracha (hot chili sauce -- use more or less to taste)

almond rice crackers and sliced fresh produce for a vegetable crudite

Combine all the ingredients in a food processor. Process until a smooth paste forms, adding water as necessary. Serve with almond rice crackers, chips, fresh fruits and vegetables, flatbread, as a sandwich filling, as a salad topper, or any other way you can devise. 

Makes 3-4 half-cup servings.

I think this is the first time i've got an entry in so early!  The ingredients chosed by Nuria were really open to so many creations and I think that is what made this so exciting.  My original creation is called

Meditteranian Rice Tartelettes and the full recipe with loads of pictures is found on the link. 
It's a RICE Tart Shell, filled with eggplant, BACON, mushrooms and topped with TOMATO. 

I myself was quite surprised at how good this tasted and beleive me, it was really, really good!  I hope you all like it as much as I do too!  Let me know if any of you try it out.

Wow I love both entries! Betherann your dish looks sooooooo good Cheesy. Great job to play with hummus, I'm loving the colours too!
Dharm, your tartalettes are so cute... I never thought about making them with rice... your entry is so original Cheesy. A lovely appetizer!!! Thanks.
