I created these for the royal food joust. The theme ingredients were bacon, tomatoes, and rice which are 3 of my favorite foods. The bacon and rice croquettes were pan fried in canola oil until crispy. I served them with a warm tomato coulis and a parsley pesto I personally ate them all. They were so good I didn't wait for anyone else to try them.

Those look great Terri, and great minds must think alike, because I also made tomato/bacon/rice croquettes yesterday for the Joust!

Very well done Terri! Gluttony is one of my favourite sins  I wonder what Nuria's favorite sin is :-p. You guys are doing a great job and I will be making something today, though terri already made something similar to what I am doing. Mine will have Mexican twist, of course :-p Great entries everybody. I am hungry now
