I love putting herbed cheese (especially herbed goat cheese) on pizza in place of mozzarella. You could also try making a quesadilla, like this sweet potato and goat cheese version:

Also, it might be fun to try something savory, like grilled chicken with chocolate sauce. Of course, hot chocolate and ice cream creations are always a fun way to go. And don't forget pudding!
