GReat contest!  I use ginger all the time in so many recipes.  From spicing up homemade salad dressings to oatmeal to seasoning veggie chips.   So many uses for ginger!

I was not sure where to post this recipe, knowing me this is the wrong place. But I had to share this recipe. I have another one my whole family loves I will post soon, it is a spice cookie with pumpkin dip.

Makes 3 dozen
8 tablespoons (1 stick) unsalted butter
3/4 cup plus 2 tablespoons sugar, plus more for sprinkling
1 large egg
1 tablespoon freshly grated lemon zest
1 1/3 cups all-purpose flour
1/2 teaspoon ground ginger
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup diced (1/8 inch) crystallized ginger
Directions
1.Heat oven to 350 degrees. Line two baking sheets with parchment; set aside. In an electric mixer, use paddle to mix butter and sugar on medium-high speed until light and fluffy, about 5 minutes, scraping down sides of bowl twice. Add egg; mix on high speed to combine. Add zest; mix to combine.
2.In a bowl, whisk together flour, ground ginger, baking soda, salt, and crystallized ginger; add to butter mixture; mix on medium-low speed to combine, about 20 seconds.
3.Using two spoons, drop about 2 teaspoons of batter on baking sheet; repeat, spacing them 3 inches apart. Bake for 7 minutes. Sprinkle cookies with sugar, rotate sheets between oven shelves, and bake until just golden, about 7 minutes more. Slide parchment with cookies onto a wire rack; let cool 15 minutes. Store in an airtight container.

Fizzy Ginger Lemonade is a flavored drink made from lemons,carbonated water,ginger and sucrose..

U need

1 cup water
1/2 cup Ginger Syrup(a combination of ginger and cane sugar from Ginger people )
1 cup club soda.
1/2 cup lemon juice
Ice cubes
 
How to make Sparkling Ginger Lemonade

Combine all items in a juice glass.Decorate with lemon slices.Serve chilled..Njoy!!!

Here's a tasty sweet and sour sauce ( condiment)!!!

It is a combination of sweet and sour together at its best.This sauce can be made ahead of time and stored in a refrigerator. Its typically served with Kerala Sadya ('Kerala' is a state in India; and 'Sadya' means meal) items.It can be used as a tasty condiment for a variety of dishes.

Things you will need:

Ginger- 200 gms;peeled and grated
Tamarind paste- 5 tbsp
Jaggery- 1 cup
Curry Leaves
Red Whole Chillies-4 or 5
Mustard Seeds- 1 tsp
Oil- 2tbsp; preferably coconut oil
Turmeric powder- 1 tsp
Red Chilli Powder- 1 tsp
Green Chillies- 3 or 4 ; finely chopped
Asafoetida powder- 1/2 tsp
Fenugreek powder- 1/2 tsp
water-1/2 cup
Salt to taste

Preparation Method:

Heat oil in a pan.
Add mustard seeds, red whole chillies,green chillies, curry leaves,asafoetida,fenugreek powder and wait till the mustard seeds splutter.
Then add ginger and fry well by stirring continuously until they turn red in color.
Add tamarind, salt, water and bring to a boil.
Now add jaggery and simmer for a few minutes.The sauce will start to thicken.
Reduce the heat and stir until the sauce has reached desired consistency.
Turn off the flame and set it aside to cool.

Delicious Ginger Tamarind Sauce(condiment) is now ready

Here's my submission -- spiced, gingery hummus with roasted butternut squash and apples!  (Also part of my Joust recipe -- is it okay to do a twofer?) 



Roasted Butternut Hummus

1 Gala (or red) apple, diced
2 cups butternut squash, cubed
1 15-oz. can garbanzo beans
Heaping spoonful garlic, minced
1 T plain yogurt
1 tsp ground ginger

brown sugar
cinnamon
chili powder
cumin
hot sauce

Prepare the first four ingredients, then stir together in a large bowl. Add cinnamon, brown sugar, and chili powder to taste. Mix well, then spread over a greased baking sheet. Roast for 35 minutes at 425*F, stirring at least once.

Remove the tray from the oven and allow to cool. Transfer to a blender or food processor. Add the yogurt, as well as cumin, hot sauce, and more chili powder to taste. Blend until smooth. Enjoy warm or chill.
